Best Ever Popovers Recipe
Popovers have become trendy lately, and that’s good, since they yummy and are very easy to make. They go well with soups and salads, and are great as a bread with dinner; they also make great breakfast breads with lots of butter and jam or honey. This version of Best Ever Popovers is quickly made in the blender, which saves time, and they puff just as well as those made in a mixer with several steps. They can easily be mixed and ready to bake in about 10 minutes, which is very little hands-on time for something this good.

1 1/2 cups whole milk
1/4 cup heavy cream

3 eggs
2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon vanilla extract, (optional)

  1. Preheat oven to 425º.
  2. Spray 6 muffin cups liberally with non-stick spray.
  3. Measure the milk and cream into a large measuring cup; microwave until just warm, about 2 minutes.
  4. Crack the eggs into a blender container; pour the warm milk over.
  5. Add the flour, salt, baking powder, and vanilla, if using; blend until smooth, scraping down the sides once or twice.
  6. Fill the muffin cups to the top. You may need to spray one extra muffin cup if there is too much batter.
  7. Place in the oven and bake 15 minutes; after 15 minutes, turn the oven temperature down to 375º.
  8. Bake an additional 20-25 minutes or until fairly dark brown and crisp. Serve hot with plenty of butter and honey or jam.
