Air Fryer Chicken & Asparagus Bundles Recipe
Have you gotten on the air fryer bandwagon? Air fryers are good for lots of things besides French fries and onion rings. They are actually little convection ovens that sit on the counter. You’ll discover that they are a quick way to prepare oven-baked foil dinners with little mess to clean up. A favorite is Air Fryer Lemon Garlic Chicken and Asparagus Bundles. These little packets are quick to put together (10 minutes, max), and cook in about 20 minutes. If you don’t have an air fryer yet, you can certainly cook these packets in a regular oven.

If you prefer, you can substitute salmon or cod for the chicken breast; the cooking time may be a little shorter. And you can use fresh green beans or another favorite vegetable if asparagus isn’t available. These yummy packets are versatile and easy enough for a weeknight dinner. Kids like to make this kind of food, and they are even easy enough for them to help.

4 Servings

1 pound boneless skinless chicken breast halves, cut into four equal portions
Favorite Seasoning salt
Freshly ground black pepper

1 pound asparagus, tough ends snapped off

3 tablespoons melted butter
2 cloves garlic, finely minced
2 lemons, 1 halved, and 1 sliced

  1. Tear 4 large pieces of heavy duty aluminum foil (at least 12" x 12") and lay them on the counter.
  2. Place a chicken breast halve in the center of each foil square.
  3. Sprinkle each breast with seasoning salt and freshly ground black pepper.
  4. Lay the asparagus on the side of the chicken breasts.
  5. Mix the melted butter and garlic; squeeze the lemon juice from the halved lemon into the butter mixture.
  6. Drizzle the mixture evenly over the chicken and asparagus on each piece of foil; divide the lemon slices over the chicken and asparagus.
  7. Bring two ends of the foil together; roll them down. Repeat with the other ends, making a tight packet. Make sure the packets are well-sealed.
  8. Place the packets in the air fryer and bake on 350° for 20 minutes.
