Thanksgiving Egg Rolls w/2 Dipping Sauces Recipe
Thanksgiving leftovers are a favorite and essential part of the holiday. Some families make turkey soup; others make a layered casserole, and some just make sandwiches. However, the leftovers can get old and most people don’t want to eat turkey leftovers every day until they’re gone. These Thanksgiving Egg Rolls with Two Dipping Sauces are a novel way to use up those leftovers, and they are delicious. Most importantly, they are quick and easy, since they are “fried” in the air fryer, which has become an essential appliance in most homes.

Makes 12

Filling:
1 cup Stuffing
1 cup chopped turkey
3 tablespoons turkey gravy

12 egg roll wrappers


3/4 cup cranberry sauce

2 tablespoons vegetable oil

Cranberry Dipping Sauce:
1 cup cranberry sauce
1 cup chicken broth
1 tablespoon cornstarch

1 cup turkey gravy

  1. Mix the leftover stuffing, turkey, and turkey gravy.
  2. Lay the egg roll wrappers set on a diagonal on a countertop. ””










  3. About 2" in from the bottom point, place about 2 tablespoons stuffing mixture; top with a heaping teaspoon of cranberry sauce.””












  4. Brush or spray the edges of the egg roll wrapper with water and bring the bottom point up over the filling, tucking it in. ””









  5. Fold the edges over to the center, envelope style. ””









  6. Roll up, pressing on the point to seal. ””


  7. Brush with vegetable oil on both sides.
  8. Heat the air fryer to 390° and set for 10 minutes
  9. Place the brushed egg rolls in the pan of the air fryer and let air fry until crisp, turning once after 5 minutes.
  10. Cranberry Dipping Sauce: Place the cranberry sauce, chicken broth, and cornstarch in a bullet blender or regular blender.
  11. Blend until smooth and transfer to a glass measuring cup or microwave safe container; microwave 3 minutes.
  12. Stir then microwave 2-3 additional minutes until thickened.
  13. Serve warm with the egg rolls along with the gravy which has been reheated.
