Easy Tater Tot Brunch Bake Recipe
During the holidays and when guests come to stay during the summer, brunch casseroles are an easy way to feed everyone easily. The following Easy Tater Tot Brunch Bake has minimal ingredients and is quick to put together. It is also very delicious, and needs only toast or other breakfast bread such as muffins, biscuits, or bagels as an accompaniment. If fresh fruit is available, you can also serve that on the side.

This casserole is versatile because you can use any breakfast meat such as sausage, ham, or bacon, according to your guest’s tastes. You can also leave the onions and green peppers out, and you can use other types of cheese that you have on hand, such as Parmesan, mozzarella, Swiss, etc. It’s possible to make this ahead, wrap it tightly, and freeze it for later; once thawed, it can be reheated in the oven. You can’t go wrong with this casserole for breakfast or brunch.

1 1/2 pounds bacon, or substitute breakfast sausage, or ham chunks or a mixture

1 32 ounce package frozen tater tots
1 small onion, finely chopped
1 green bell pepper, finely chopped

12 eggs
1/2 cup heavy cream

2 cups grated cheddar cheese

  1. Chop the bacon and cook it until crisp. If substituting breakfast sausage, cook well and drain, if substituting ham, dice and use as is.
  2. Spray a 9" x 13" baking dish with non-stick spray. Place the tater tots in the dish in a single layer; sprinkle with the onions, bell peppers, and bacon (or sausage or ham).
  3. Place the eggs and cream in a blender and blend on low speed until combined; pour over the tater tots and vegetables.
  4. Sprinkle with the cheese and bake about 45 minutes or until the cheese is bubbly and brown.
  5. Let sit about 10 minutes before cutting into squares.
