Quick and Easy Chicken and Broccoli Stir Fry
This stir fry recipe is quick and easy using just a few ingredients, some of which require no preparation at all. The pre chopped garlic saves time from prepping and usually comes in a jar which lasts for a while in the refrigerator. Ginger can sometimes also be found pre chopped either frozen or in a refrigerated tube. However, I’ve found that both of these products do not carry the same flavor from the fresh version. It is enough of a difference to change the flavor of the entire recipe. Frozen broccoli comes pre cut and if you can find just the florets they are the best for this recipe. By saving time in preparation, this recipe takes only approximately 35 minutes to make, enjoy.
1.5 lbs. boneless skinless chicken breasts
1 tsp garlic salt
1 bag frozen broccoli
¾ inch piece of fresh ginger
1/2 tsp pre chopped garlic
2 tbsp vegetable oil
2 tbsp soy sauce

- Trim the fat from each breast and cut them into 1/2 inch pieces. Sprinkle these pieces with the garlic salt using your hand to mix it into the chicken evenly. Then let this sit at room temperature while preparing the other ingredients.M
- Place the broccoli in a colander and rinse it under warm water until it is completely defrosted. Shake lightly to remove as much water as possible.
- Peel the ginger and mince.
- Next heat a wok or a large non stick pan on high, add one tablespoon of oil and let it get hot.
- Once hot, add the chicken and stir fry for 5 to 7 minutes, or until lightly browned on all sides. Then remove it to a plate and set it aside.
- Add the remaining tablespoon of oil and let it get hot. Then add the ginger and stir fry for 30 seconds.
- Then add the garlic and stir fry for just a second. Be careful because the garlic will burn quickly.
- Then immediately add the broccoli and stir fry for 30 seconds.
- Then return the chicken to the wok and add the soy sauce. Stir fry everything for 1 minute. Then it is ready to serve. Serve with white steamed rice on the side. Enjoy!
