Instant Pot Stuffed Pork Chops Recipe
Stuffed pork chops have long been a popular comfort food. With the popularity of the Instant Pot, they are now a Quick comfort food, especially when using a box of stuffing mix. The pork chops are browned, a pocket is cut through the middle, and the pocket is filled with the stuffing. Once assembled, the Instant Pot Stuffed Pork Chops take only five minutes cooking time (remember it takes a bit more time to get the pot up to pressure). They come out tender and juicy, and there is plenty of flavorful juice to pour over them.

8 Servings

8 center cut pork chops, 1" thick
Seasoning salt, (your favorite) (I use Smokey Mesquite)
2 tablespoons olive oil

Stuffing:
1 6 oz. package cornbread stuffing mix (dry)
1/4 cup butter
1 2/3 cups water

1 cup white wine
4 teaspoons granular chicken bouillon

2 cups water

  1. Trim the chops of any visible fat and sprinkle with the seasoning salt.
  2. Heat the olive oil in the Instant Pot on the sauté setting and brown the chops on both sides in batches.
  3. Remove the chops from the Instant Pot and set aside on a plate; cut into each chop forming a pocket.
  4. Add the wine and chicken bouillon to the Instant Pot (still on the sauté setting), stir, and let cook, scraping any bits from the bottom, until the mixture is reduced by half and is thickened slightly.
  5. Meanwhile, make the stuffing: bring the water and butter to a boil; stir in the stuffing mix, cover, and let sit 5 minutes.
  6. Fluff with a fork and when the pork chops have been browned, fill each pocket with stuffing.
  7. Arrange the chops, stuffing side up in the Instant Pot; pour the water over all.
  8. Cover the pot, set the valve to sealing, and set the pot to manual for 5 minutes.
  9. When the cycle is finished, let sit 10 minutes, then release the pressure and place the chops on a serving platter.
  10. Pour the juices into a strainer set over the chops.
