Instant Pot®/Air Fryer Glazed Meatloaf Recipe

Instant Pot®/Air Fryer Glazed Meatloaf Recipe
The new multi-cookers which include pressure cookers are awesome, and it seems almost everyone nowadays has one. So some companies have tried to do a one-up on the Instant Pot® type multi-cookers by adding an air fryer lid; a combination multi-cooker air fryer can be used in so many ways and eliminates the need for two separate appliances. I purchased the Ninja Foodi®, and love it, but have seen a few new brands in stores and on the internet at quite reasonable prices. If you’re not an appliance junkie, you may just be happy with your multi-cooker and air fryer, and the following Instant Pot®/Air Fryer Glazed Meatloaf can be made easily in the pressure cooker and air-fryer separately. In this recipe, the meatloaf pressure cooks in 25 minutes, then a glaze is added and it cooks an additional 10 minutes in the air fryer. You can cook it directly on the rack, or if you have a loaf pan that fits in your Instant Pot, you can cook it in that. Either way, the meatloaf comes out moist and delicious with a sticky topping.

This is my family’s favorite meatloaf, but you can vary the seasoning if you like. It makes a big one, but half can be frozen for smaller families.

8 Servings

1/2 cup dry bread crumbs
2 eggs
1 tablespoon Lawry's seasoned salt
1/4 teaspoon freshly ground black pepper
1 8 oz. can tomato sauce

2 pounds lean ground beef

Glaze
1/2 cup catsup
1/4 cup brown sugar
1/2 teaspoon dry mustard
1 tablespoon red wine vinegar

  1. Pour 1 cup water in the bottom of the pan of the Instant Pot® (or similar).
  2. Add a rack with handles or a rack and a sling made from aluminum foil so that the meatloaf can be removed easily.
  3. Mix the bread crumbs, eggs, seasoned salt, pepper, and tomato sauce.
  4. Add the ground beef and mix well; form into a round loaf and place it on the rack, or a regular loaf and place in a standard loaf pan that fits in your Instant Pot®.
  5. Cover, set the valve to sealing, and set to manual for 25 minutes.
  6. When the cycle has finished, do a quick release and remove the meatloaf from the pan.
  7. Dump the water, clean the pot, and place the meatloaf back in the pot. If you have chosen to do the meatloaf in a loaf pan, pour off any accumulated fat.
  8. Mix the glaze ingredients well and pour over the top of the meatloaf.
  9. Set to air fryer or transfer the loaf to the air fryer and air fry for 10 minutes at 390º.
  10. Remove from the air fryer and let sit 10 minutes before slicing.
